Best windows os for server

Hello i can choose os for my server from list:

Windows Server 2016 Standard
Windows Server 2012 R2
Windows Server 2008 R2 Webserver
Windows Server 2008 R2 Standard
Windows Server 2008 R2 Enterprise
Windows Server 2008 R2 Datacenter
Windows 7 Ultimate Edition
Windows 10 Pro
Windows 8.1


Now i have win7 64 ulti, if i choose e.x server 2012 ( or other server editon) my performance will be better?
I found a way to install windows on a server with linux (ovh) (I have a legal key) but I do not know if it will be stable, does anyone know what I'm talking about and did it?

 

Hosting via Windows 10 and works fine, and i think Windows 2016 server would be also good
